No matter how you shape em', cook em', eat em'...there is no denying the classic goodness of this All-American fare! Back in the day these tasty meat patties were prepared without much fuss and most times without condiments. Today, the hamburger comes to us in a variety of forms; from the decadent 1/2 pounder with eggs and bacon to the rather curious veggie burger. This is my ode' to The Tastiest Hamburgers Ever. Bon Appetite' :-)
September Recipe
Whole Wheat Hamburger Bun
I am so excited to bring this recipe to my lens! In our financially leaner days we made bread almost every night. It helped us pinch pennies, connected us as a couple, and became our creative outlet. Our breads were beautiful braids made with love! It's magical how life comes full circle, now we are back to the basics...a little out of necessity and a lot because we appreciate knowing what we are eating. We hope you enjoy this recipe as much as we are!
1 1/4 cups warm water (about 100F)
1/3 cup mild oil
1/4 cup sugar (or honey)
2 packages yeast (2 scant Tbsp)
4 teaspoons salt
1 egg yolk
2 ½ cups whole wheat flour
1 cup bread flour (or all-purpose flour
Melted butter
Combine water, oil, sugar/honey and yeast. Mix thoroughly and then allow to rest for 15 minutes. Mix in the salt, egg yolk, whole wheat flour, and white flour and combine until thoroughly mixed (at least 10 minutes). On a floured board, roll the dough out until it is about 3/4-inch thick. cut circles of dough about 4-inch in diameter with a cutter (or use a large empty can that you have washed out).
Place the buns on a cookie sheet, brush the tops with melted butter, and allow to raise for 30 minutes. Bake at 425F for 10 minutes or until golden brown. YIELD: 10 buns
Here's my tried and true recipe, enjoy kickin' it up with the ideas below!
1 1/2 pounds of lean ground beef
1/4 cup rolled oats; uncooked
1-2 tsp garlic powder
Salt and pepper; to taste
With clean hands (what I always said to my boys before they dug in :-), mix all ingredients. Shape into 6-8 patties, depending on how large you want your burgers. Grill, broil, or pan fry; usually 7-10 minutes per side and dependent on how you like your's cooked.
Great Additions: Use these along with the recipe above; mix and match to taste
1/2 cup of finely minced onion
1 jalapeno pepper; split with seeds removed and finely diced
1/2 cup of cubed cheddar cheese
1/4 cup of crumbled feta or fine goat cheese
1/2 cup of fresh sweet corn. Straight up to add a pop of sweetness
1 tbsp sesame seeds
Diced, pickled garlic (several flavored blends in your local market)
This is My Favorite Way to Eat a Burger
Barbecued or broiled hamburger patty
Whole wheat onion bun
Mayonnaise on one side of the bun, mustard on the other
Although I have never tried buffalo, not to my knowledge anyway, it is described as beef-like with a little sweetness. Hmm, sounds good to me.
1 lb ground buffalo
1/4 tsp black pepper
1 tsp Worcestershire sauce
4 tsp ketchup
1 tsp salt
1 tsp mustard
2 tsp horseradish
The beauty of this recipe is that accurate measurements can go out the window. Add more or less of the seasonings that you like. Toss it all in and mix it up. Patty up, grill, and serve like a regular hamburger. Tip: If you have a grill that tells the temperature, keep it down! Or let the coals die down some. Don't put lean buffalo meat in the flame. (Buffalo is a lean red meat and is some what dry so you have to cook it slowly to keep the juices in.) These burgers were taste tested by the usually critical teen-age crowd. They asked for seconds, I'll take that as an impressive OK.

Sage and Onion Turkey Burger
I am very fond of using ground turkey as an alternative to chopped meat. While I have not tried this recipe, the mix of ingredients, along with the special cranberry orange ketchup sounds delicious. Bet your Friday Night Game friend's would love this one!
1 1/4 pounds ground turkey
2/3 cup fresh whole wheat bread crumbs
1/2 cup finely chopped onion
1/3 cup finely chopped celery
1 egg white
1 tsp dried rubbed sage
1/2 tsp dried leaf thyme
1/2 tsp dried summer savory
1/2 tsp salt
1/4 tsp ground black pepper
6 whole wheat hamburger buns
Directions:
Prepare a medium hot barbecue fire or preheat a gas grill or broiler.
In a large mixing bowl, use your hands to mix together the turkey, bread crumbs, onion, celery, egg white, sage, thyme, savory, salt and pepper. Form into six patties, each about one half inch thick.
Grill or broil the burgers, turning once carefully with a spatula, until browned on both sides and white throughout (about 10 minutes total). Place the buns, cut side down, at the edge of the grill to toast slightly, about one minute.
Serve the burgers on the toasted buns, spread with Cranberry Orange Ketchup. Serves 6.

1-1/2 pounds sweet onion (such as Vidalia or Maui, about 1 very large bulb)
Cut onion in half, then into thin slices. Finely chop some of the slices to equal 1/4 cup chopped onion; set the slices aside. Heavily coat a small nonstick pan with nonstick spray; heat over medium heat, then add chopped onion and 1 teaspoon of the cinnamon chipotle rub. Cook 1 minute or until fragrant. Combine seasoned onion with ground beef in a large bowl. Shape into 16 small burgers, each about 1-inch thick. Can be made ahead and covered with plastic wrap; refrigerate for up to 6 hours.
Heat oil in a large nonstick skillet over medium heat. Add reserved onion slices and cook, stirring often, 10 minutes or until lightly golden. Sprinkle remaining 3 teaspoons cinnamon-chipotle rub and cook 1 minute. Add bourbon and cook 2 minutes, until liquid is reduced. Stir in ketchup and mustard; simmer 2 minutes. Can be made ahead; cover and refrigerate for several hours.
Heat gas grill to medium-high or prepare charcoal grill with medium-hot coals. Grill burgers about 6 minutes per side or until instant-read thermometer registers 160 degree F. Reheat onions if necessary. Place patties on buns, topping each burger with a tablespoon of onions; serve remaining onions on the side.
*Note: If you cannot find the rub, stir together 1 teaspoon ground cinnamon and 4 teaspoons chipotle or chili powder (you'll have a little extra).

An interesting blend of ingredients, plus my decision to eat healthier, makes me more motivated then ever to give this recipe a try. Bet it won't fool my meat-lover husband, but I'll give it a twirl! I kinda like freakin' him out with the new things I've been trying. ;-)

OK, now why hasn't this lens been featured for a Summer LOTD. Was it and I missed it maybe??? Chipotle Mini Burgers -- OMG, I have got to have a few of these. Like it spicy. 5***** and blessings. Yumm Yumm.
Great lens. I like trying new burgers, but I love the tomato, lettuce, pickle, real onion option with ketchup and mustard. In fact, the burger part is relatively unimportant.
I eat less red meat that many people but I love to indulge about once a week. A big juicy hamburger is definitely among my favorites. Excellent, mouth watering lens!
